If you can find a perfectly ripe cantaloupe melon (or watermelon, summer melon, or honeydew), this is a really beautiful way to prepare a side salad on the autoimmune protocol.
Since fruit on the AIP is considered an ok-to-eat-in-moderation food, this salad is a nice way to balance the sweetness of the melon with some cucumber, mint, and red onion. It makes for a lovely AIP side dish or breakfast.

🥒Ingredients and Instructions for Melon Salad
As you can see, I like to use a melon baller for scooping the cantaloupe melon and then just slice the baby Persian cucumber into coins (English cucumber works, too).
Red onion needs to be sliced really thinly and soaked for about 20 minutes in cold water to remove the bite. I always soak raw red onion when using in salads.
Fresh mint adds a refreshing, unexpected element and so does fresh lime juice.

When I first created this recipe (and photographed it), I was following the AIP diet with my husband but we did not omit black pepper. Later in the timeline, when I was diagnosed with Hashimoto's, I ultimately eliminated black pepper during the elimination phase and so I'll let you decide whether to include it here.
Since black pepper is a seed and an immune stimulant, it can trigger reactions (ie symptoms) in those with autoimmune conditions. For those looking to include flake salt (as I do), I really enjoy Maldon.

AIP Cantaloupe Cucumber Salad
Ingredients
- 1 small red onion
- 1 ripe melon (such as cantaloupe or honeydew)
- 1 oz fresh mint leaves
- 1 lime
- ½ teaspoon flaked sea salt
Instructions
- Start by slices the red onion very thinly - you only need about 10 slices total. Submerge the onion under water for up to 20 minutes to dull the bite.
- Cut the ripe melon in half and scoop out the seeds with a spoon. Using a melon baller, scoop the flesh into a bowl or use a knife to cut into chunks about 1" by 1".
- Mix into the mellon: freshly torn mint leaves, red onion, the juice of 1 lime, and sprinkle with salt just before serving.
