Carob Avocado Pudding. Did you know that if you whip avocado with carob, coconut oil, and maple syrup, you get a chocolate-like pudding? This dessert is so thick, creamy and delicious, you could totally pipe it on your favorite AIP cupcake as a frosting.

You only need 6 ingredients to make this exquisite pudding:
- ripe avocados
- carob powder
- maple syrup
- vanilla extract
- sea salt
- coconut oil
That's it, but if you want to incorporate a garnish, I'm partial to fresh, tart berries.
📖 Variations
For AIP, you could use maple syrup, date syrup, coconut nectar, honey, or even creamy palm sugar interchangeably.
For non-AIP, feel free to swap cocoa powder for the carob powder.

Source notes: I developed this recipe for The Frayed Apron but I first encountered the idea in my health supportive culinary program at The Natural Gourmet Institute. I've adapted that recipe by reducing the sugar content from ½ cup to 6 tablespoons for people with autoimmune conditions.
Carob Avocado Pudding {AIP, Dairy-Free, Egg-Free}
Ingredients
- 2 ripe avocados
- ¼ cup carob powder
- 6 tablespoons maple syrup or other nutritive liquid sweetener
- 1 teaspoon vanilla extract
- 1 pinch sea salt
- 1 tablespoon coconut oil refined or unrefined
Instructions
- PREPARE THE AVOCADOS. Cut avocados in half and remove seeds. Use the peel as a handle to squeeze the avocado into a blender, food processor, or bowl (if using an immersion blender).
- BLEND UNTIL CREAMY. Add carob, maple syrup, vanilla, salt, and oil and blend on high until smooth and evenly consistent. You may need to use a spatula to scrape the sides. Once the pudding is lump free and uniform in color, portion into parfait glasses, cover with plastic wrap and transfer to the refrigerator for at least 30 minutes or up to 2 days. It will firm up a bit because of the coconut oil.
- GARNISH AND SERVE. Enjoy cold with toasted coconut or fresh berries, such as raspberries or strawberries.

It has a slightly sweet and toasty flavor that is reminiscent of chocolate.
Carob contains no caffeine and is considered anti-inflammatory. Medicinally, carob is taken to improve gut health and balance blood sugar.
Avocado provides richness and is a healthy source of monounsaturated and polyunsaturated fats ("good fats"). The avocado provides vitamins C, E, and K as well as folate, which helps the body produce healthy red blood cells. Eating avocado on AIP can help prevent inflammation. Avocados can also help with weight management, digestive health, and cognitive function.
